Tokyo Kaikan – This restaurant is credited for inventing the first California Roll in Los Angeles in 1968. Chef Ichiro Mashita started experimenting with avocados and discovered the texture was somewhat similar to the texture of Toro (Fatty Tuna). This was a revelation and very quickly the roll gained popularity. Giving birth to this new sushi roll, it is safe to say it helped spread the taste of sushi through out California and then onwards to the rest of the country.
